Do you ever talk to a loved one while thinking about fried chicken in the back of your mind? As someone who typically doesn’t crave fried foods, I need a fried chicken fix at least once a year. The more figure friendly and heart healthy, the better.

If you’re passionate about eating delicious food that will empower your health versus clogging your arteries, you might enjoy Ellie Krieger’s “Oven Fried Chicken.” Krieger, a registered dietitian and host of “Healthy Appetite” on The Food Network and The Cooking Channel, has created a scrumptious version of fried chicken-minus the grease and large amounts of saturated fat.

This is an easy dish to prepare. According to Krieger, the prep time for this recipe is 15 minutes, while the cooking time is 45-50 minutes. She’s right.

The breading used to coat the chicken and provide a “fried” effect, can be prepared a couple days ahead of time. Just store the mixture in an air tight container.

Cayenne pepper gives this dish some kick. Reduce the amount of cayenne for those who are sensitive to spicy food.

After tasting this meal for the first time, my husband said it was the “best fried chicken” he had ever tried. My mother loved the crispy coating and hint of cayenne. We all agreed that each piece was incredibly moist.

Why I like this recipe: This is a delicious, nutritious, simple, and affordable recipe. It’s a crowd pleaser-in the form of lean protein.

Saturated fat reduction tip: Fat free plain yogurt can be substituted for the low fat version in this dish. Thanks to the cayenne pepper’s heat, the flavor is not sacrificed.

Money saving tip: Buy chicken in bulk when it’s on sale. Freeze the raw chicken for later use. Thaw chicken prior to preparing this dish. To make this meal stretch further, try cutting each chicken breast in thirds. Not everyone can eat an entire chicken breast.

Ingredients: whole-grain salted crackers, corn cereal flakes, sesame seeds, cayenne pepper, garlic powder, egg whites, low fat plain yogurt, Dijon mustard, salt, olive oil cooking spray, 3 ½ pounds of chicken (4 skinless chicken breasts and 4 skinless chicken thighs-or mix it up)

As for this chicken recipe, the yogurt seems to do a great job of keeping each piece of chicken moist. My husband is one of those guys who thrives off of chicken wings, chicken tenders, etc. He can't get enough of this oven-fried version. Needless to say, this recipe is like gold in our family! okay, girl... you were made to write! i love this! hugs. and yes, i love fried chicken, however i rarely eat it. but gosh, i used to gram many kentucky fried chicken chicken legs in my belly back in the day. mmm!!!!! :)
